Potatoe Salad

I like potatoe salads, but the store-bought ones usually contain way too much mayonnaise. This recipe is inspired by the potatoe salad that my boyfriend's father always prepares. I've never seen anyone put curry powder in the dressing before! But it tastes very good. 



Ingredients (serves 2-3):

about 8 medium-sized potatoes

125ml or half a cup of mayonnaise

150g pickled cucumbers

4 tablespoons of water

curry powder

smoked paprika

pepper

two teaspoons of fresh or frozen parsley

vegetable broth (powder)

salt

2-3 hard-boiled eggs

Peel the potatoes, cut them into slices, cubes or wedges (depending on how you like them) and then cook them in salted water. When the potatoes are done, rinse them and let them cool. In the meantime, you can prepare the dressing. Mix the mayonnaise, the water, a teaspoon of vegetable broth, the parsley, smoked paprika, pepper, a pinch of salt and a few tablespoons of curry powder. Cut the pickled cucumbers into thin slices. Combine the potatoes, cucumbers and the dressing. You can eat it right now, but it tastes better when you let it sit in the fridge for a few hours. Serve with hard boiled eggs on top.
