Loaded Potatoes (vegan/non-vegan)

I've always wanted to try loaded potatoes or twice baked potatoes, but most recipes aren't vegan and wouldn't be possible to eat during my vegan fast. But when I found vegan crème fraîche at the store, I decided to give it a try. And right after I decided that we would have this for dinner, I saw that Sister in the Mid-west from Simple Inspirations had also shared a delicious-looking recipe for twice baked potatoes. 
However, I didn't bake the potatoes twice because it was already a little late and I was a little lazy, so these are just loaded potatoes. I think this recipe might also be great when you have some left-over chili.

Vegan Joghurt Dressing + Salad Tips

Store-bought dressings are often not vegan and they can be expensive. Additionally, they often contain lots of fat, sugar and other ingredients like preservatives, flavor enhancers and aroma. Making a dressing at home is cheaper (even if you use vegan products, which are usually more expensive than non-vegan ones!) and you can also control how much fat and sugar will go into the dressing. 

This recipe is something I came up with last evening and my boyfriend told me that it tasted just like the ones that you can buy at the supermarket. He would have never guessed that it was home-made and vegan!

At the end of this post, I also share two tips on how to prepare salads.
