Red Bell Pepper Soup With Feta Cheese & Ground Meat

This is a very delicious soup which is everything but boring! I found the recipe on pinterest and decided to change a few things. It turned out so good! My boyfriend really loved it (and I did, too). 

Ingredients (serves 3-4):

2 onions
2 cloves of garlic
3 red bell peppers
500 g ground meat (half pork, half beef)
200g of feta cheese
3 teaspoons of pesto calabrese (or any other pesto you like)
700ml vegetable broth
fresh or dried thyme, oregano and basil
cayenne pepper
sweet paprika
olive oil 

Dice the onions and the bell pepper. Heat a little bit of olive oil in a cooking pan and sauté the onions and the bell pepper. Finely chop the garlic. Add in the vegetable broth, the chopped garlic and the dried herbs (if you're using fresh herbs, add them in later). Let it simmer for about 10-15 minutes. 

In the meantime, sauté the meat in a frying pan until it's browned and season it with salt, cayenne pepper, sweet paprika and pepper. 

Cut the feta cheese into medium-sized chunks and add half of them to the soup. Then thoroughly blend the soup and season it with salt, pepper, cayenne pepper and sweet paprika. Also add in the pesto. 

Serve the soup with the meat and the rest of the feta cheese crumbled on top. You can also add some fresh herbs for serving.
