Cream of Pea Soup

This is a delicious and simple pea soup. It's gluten-free and if you want to make it vegan, you can replace the soured cream with vegan soured cream, vegan yoghurt or simply leave it out. I feel like this is more of a spring soup, but of course it tastes great in every season of the year :D





Ingredients (serves 2-3):

1 onion
50 g leak
50 g celery
400 g frozen peas
750 ml vegetable broth
50 g soured cream
a handful of parsley
5 basil leaves
some oil
salt, pepper

Finely chop the onion, leak and celery. Heat the oil in a pan and add in the onion, leak and celery. Sauté them for 5 minutes, then add in the vegetable broth and the frozen peas. Cook until the peas are done. This should take about 10 minutes. Add in the herbs, but keep some for serving. Blend the soup until it reaches a creamy consistency and season with salt and pepper. Serve with a dollop of soured cream and the rest of the herbs.
