Hot Tomato Soup





I love tomato soups and tomato sauces! 

So today I want to share with you a recipe for a hot and creamy tomato soup. It's even vegan, dairyfree, glutenfree and whatnot :)


You need (serves 2 as a main dish, 4 as a side dish): 

500ml tomato puree
1 can crushed tomatoes
500ml vegetable stock
2 onions
4-5 garlic cloves (medium size)
5 rawit chilies (or less)
1 red bell pepper
4 tablespoons of olive or coconut oil
2 level tablespoons of white rice
dried basil
dried oregano
a pinch of sugar
a splash of lime juice
salt
pepper

1. Finely dice the onions, the red bell pepper and the garlic. Remove the seeds from the chilies and cut them into fine pieces. 

2. Heat the oil in a pot and sauté the onions for 5 minutes. Add the bell pepper, the garlic and the chilies and sautè for another five minutes. 

3. Add in the vegetable stock, the tomato puree, the crushed tomatoes, the rice and the herbs. Bring to a boil and let it simmer for 15-20 minutes until the bell pepper and the rice are done. 

4. Take a blender or any other device to puree the soup. Season with sugar, salt, pepper and the lime juice. 

This soup tastes great with a few slices of freshly baked bread. 

If it's too hot, you can still add some vegan or dairy cream, but because of the rice, you don't need to add flour or cream to thicken the soup.
